Ingredients 

Main Ingredients

  • 500 g Yellow Pumpkin peeled and diced
  • 1 cup Grated Coconut
  • 2 tablespoon Coconut Oil
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Cumin Seeds
  • 2 nos Green Chilies slit
  • 1 teaspoon Turmeric Powder
  • to taste Salt
  • 1 sprig Curry Leaves

Instructions 

  1. Heat coconut oil in a pan over medium heat.
  2. Add mustard seeds and let them splutter.
  3. Add cumin seeds, green chilies, and curry leaves. Sauté for a minute.
  4. Add the diced yellow pumpkin, turmeric powder, and salt. Mix well.
  5. Cover and cook for 10-15 minutes until the pumpkin is tender.
  6. Add grated coconut and mix well. Cook for another 2-3 minutes.
  7. Serve hot as a side dish with rice or roti.
