Main Ingredients
- 3 units Eggs
- 1 cup Sugar
- ½ cup Lemon Juice Freshly squeezed
- 1 tablespoon Lemon Zest Grated
- ½ cup Butter Cut into pieces
In a saucepan, whisk together eggs, sugar, lemon juice, and lemon zest.
Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
Remove from heat and stir in butter until melted and smooth.
Strain the lemon curd through a fine-mesh strainer into a bowl to remove any lumps.
Let cool, then refrigerate. Lemon curd will thicken as it cools.
