  • 1 cup Sugar
  • ½ cup Lemon Juice Freshly squeezed
  • 1 tablespoon Lemon Zest Grated
  • ½ cup Butter Cut into pieces

Instructions 

  1. In a saucepan, whisk together eggs, sugar, lemon juice, and lemon zest.
  2. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
  3. Remove from heat and stir in butter until melted and smooth.
  4. Strain the lemon curd through a fine-mesh strainer into a bowl to remove any lumps.
  5. Let cool, then refrigerate. Lemon curd will thicken as it cools.
