Ingredients 

Main Ingredients

  • 2 cups Corn kernels fresh or frozen
  • 1 cup Beans cooked
  • 1 cup Squash diced
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 6 cups Vegetable broth
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black pepper to taste

Instructions 

  1. 1. In a large pot, sauté the onion and garlic until translucent.
  2. 2. Add the corn, beans, and squash. Cook for a few minutes.
  3. 3. Pour in the vegetable broth and bring to a boil.
  4. 4. Reduce heat and simmer for about 45 minutes, until vegetables are tender.
  5. 5. Season with salt and pepper to taste. Serve hot.
