Ingredients

  • 2 tablespoon Butter
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Curry Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 Apple, peeled and chopped
  • 1 Carrot, chopped
  • 1 cup Red Lentils
  • 4 cups Chicken Broth
  • 1 cup Coconut Milk
  • to taste Salt and Pepper
  • 2 tablespoon Fresh Cilantro, chopped for garnish

Instructions 

  1. 1. Melt butter in a large pot over medium heat.
  2. 2. Add chopped onion and garlic, sauté until softened.
  3. 3. Stir in curry powder, ground cumin, and ground coriander. Cook for 1 minute.
  4. 4. Add chopped apple and carrot, cook for another 5 minutes.
  5. 5. Add red lentils and chicken broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. 6. Stir in coconut milk and season with salt and pepper. Simmer for another 5 minutes.
  7. 7. Garnish with fresh cilantro before serving.
