Mulligatawny Soup Recipe

- 2 tablespoon Butter
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 tablespoon Curry Powder
- 1 teaspoon Ground Cumin
- 1 teaspoon Ground Coriander
- 1 Apple, peeled and chopped
- 1 Carrot, chopped
- 1 cup Red Lentils
- 4 cups Chicken Broth
- 1 cup Coconut Milk
- to taste Salt and Pepper
- 2 tablespoon Fresh Cilantro, chopped for garnish
1. Melt butter in a large pot over medium heat.
2. Add chopped onion and garlic, sauté until softened.
3. Stir in curry powder, ground cumin, and ground coriander. Cook for 1 minute.
4. Add chopped apple and carrot, cook for another 5 minutes.
5. Add red lentils and chicken broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
6. Stir in coconut milk and season with salt and pepper. Simmer for another 5 minutes.
7. Garnish with fresh cilantro before serving.
