Ingredients 

Main Ingredients

  • 1 cup Quinoa rinsed
  • 2 cups Water
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • ¼ cup Red Onion finely chopped
  • ¼ cup Feta Cheese crumbled
  • ¼ cup Olive Oil
  • 2 tablespoons Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper freshly ground

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes.
  3. 3. Remove from heat and let quinoa sit, covered, for 5 minutes. Fluff with a fork.
  4. 4. In a large mixing bowl, combine quinoa, cherry tomatoes, cucumber, red onion, and feta cheese.
  5. 5. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
  6. 6. Pour the dressing over the salad and toss to combine.
  7. 7. Serve immediately or refrigerate for later.
