  • 1 cup Dried red beans soaked overnight
  • 1 cup Rice cooked
  • 1 medium Onion chopped
  • 1 medium Green bell pepper chopped
  • 2 cloves Garlic minced
  • 2 cups Chicken broth
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste

Instructions 

  1. 1. Rinse and drain the soaked beans.
  2. 2. In a large pot, sauté the onion, bell pepper, and garlic until soft.
  3. 3. Add the beans, chicken broth, and seasonings to the pot. Bring to a boil.
  4. 4. Reduce heat and simmer for about 45 minutes or until beans are tender.
  5. 5. Serve over cooked rice.
