Instructions
Heat oil in a large pan over medium heat.
Add mustard seeds and cumin seeds. Let them splutter.
Add chopped onions and sauté until golden brown.
Add minced garlic and sauté for another minute.
Add turmeric powder, red chili powder, and salt. Mix well.
Add chopped tomatoes and cook until they soften.
Add diced potatoes and chopped okra. Mix well.
Add water and bring to a boil. Reduce heat and simmer until potatoes are tender and the curry thickens.
