Spicy Indian Chicken and Mango Curry Recipe

- 500 g Chicken Breast cut into cubes
- 1 Mango peeled and diced
- 1 cup Coconut Milk
- 1 Onion finely chopped
- 2 cloves Garlic minced
- 1 tablespoon Ginger grated
- 2 tablespoon Curry Powder
- 1 teaspoon Chili Powder
- 1 teaspoon Turmeric
- 1 teaspoon Salt or to taste
- 2 tablespoon Vegetable Oil
- 1 cup Water
- 1 tablespoon Fresh Cilantro chopped, for garnish
Heat the vegetable oil in a large pot over medium heat.
Add the chopped onion and cook until translucent.
Add the minced garlic and grated ginger, cook for another minute.
Add the curry powder, chili powder, and turmeric. Stir well.
Add the chicken cubes and cook until they are no longer pink.
Pour in the coconut milk and water, bring to a simmer.
Add the diced mango and salt. Cook for 20 minutes, stirring occasionally.
Garnish with chopped cilantro before serving.
