- 1 can Black-eyed peas drained and rinsed
- 1 can Corn drained
- 1 cup Cherry tomatoes halved
- ½ cup Red onion finely chopped
- ½ cup Cilantro chopped
- ¼ cup Olive oil
- ¼ cup Red wine vinegar
- 1 teaspoon Salt
- ½ teaspoon Black pepper
In a large mixing bowl, combine the black-eyed peas, corn, cherry tomatoes, red onion, and cilantro.
In a small bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper.
Pour the dressing over the vegetables and toss to coat evenly.
Refrigerate for at least 1 hour before serving to allow the flavors to meld.
