Ingredients 

Main Ingredients

  • 2 cups beetroot, peeled and grated
  • 1 cup carrot, peeled and grated
  • 1 cup potato, peeled and diced
  • 1 cup cabbage, shredded
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 6 cups vegetable broth
  • 2 tablespoon tomato paste
  • 2 tablespoon lemon juice
  • to taste salt and pepper
  • to serve sour cream and fresh dill

Instructions 

  1. 1. In a large pot, heat some oil over medium heat. Add the onions and garlic, and cook until softened.
  2. 2. Add the grated beetroot, carrot, and diced potato. Cook for about 5 minutes, stirring occasionally.
  3. 3. Stir in the tomato paste and cook for another 2 minutes.
  4. 4. Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for 30 minutes.
  5. 5. Add the shredded cabbage and lemon juice. Season with salt and pepper to taste. Simmer for another 15 minutes.
  6. 6. Serve hot with a dollop of sour cream and a sprinkle of fresh dill.
