West Indian Curried Chicken Recipe

Main Ingredients
- 1 kg Chicken, cut into pieces
- 2 tablespoon Curry Powder
- 1 large Onion, chopped
- 3 cloves Garlic, minced
- 1 tablespoon Ginger, minced
- 2 cups Coconut Milk
- 2 tablespoon Vegetable Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 2 cups Water
1. Heat the oil in a large pot over medium heat.
2. Add the chopped onion, garlic, and ginger. Sauté until fragrant.
3. Add the curry powder and cook for another minute.
4. Add the chicken pieces and cook until they are browned on all sides.
5. Pour in the coconut milk and water. Stir well.
6. Season with salt and black pepper. Bring to a boil.
7. Reduce the heat and let it simmer for 30-35 minutes, or until the chicken is cooked through.
8. Serve hot with rice or roti.
