Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 lb Chicken Breast, cooked and shredded
  • 2 cans Great Northern Beans, drained and rinsed
  • 1 can Corn, drained
  • 2 cups Chicken Broth
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
  • 1 teaspoon Chili Powder
  • 1 cup Sour Cream
  • 1 cup Shredded Cheese

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until translucent, about 5 minutes.
  3. Stir in minced garlic and cook for another minute.
  4. Add shredded chicken, beans, corn, and chicken broth. Stir to combine.
  5. Season with cumin, oregano, and chili powder. Bring to a simmer and cook for 20 minutes.
  6. Remove from heat and stir in sour cream and shredded cheese until melted and well combined.
  7. Serve hot, garnished with additional cheese or sour cream if desired.
