Main Ingredients
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 lb chicken breast, cubed
- 2 cans white beans, drained and rinsed
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon chili powder
- 1 cup sour cream for serving
- 1 cup shredded cheese for serving
- 1 handful cilantro, chopped for garnish
Heat olive oil in a large pot over medium heat.
Add diced onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Add cubed chicken breast and cook until no longer pink.
Stir in white beans, chicken broth, cumin, oregano, and chili powder. Bring to a boil.
Reduce heat and simmer for 20 minutes.
Serve hot, topped with sour cream, shredded cheese, and chopped cilantro.
