Instructions
Heat oil in a large pot over medium heat.
Add onions and cook until golden brown.
Add garlic and ginger, sauté for 2 minutes.
Stir in the Madras curry powder and cook for another minute.
Add chicken and cook until browned on all sides.
Pour in the canned tomatoes and coconut milk. Bring to a boil.
Reduce heat and simmer for 20 minutes or until chicken is cooked through.
Season with salt and pepper to taste.
Garnish with chopped cilantro before serving.
