Indian Chicken Madras

Ingredients 

Main Ingredients

  • 500 g Chicken Breast cut into cubes
  • 2 tablespoon Vegetable Oil
  • 1 large Onion finely chopped
  • 3 cloves Garlic minced
  • 1 tablespoon Ginger grated
  • 2 tablespoon Madras Curry Powder
  • 400 g Canned Tomatoes chopped
  • 200 ml Coconut Milk
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 1 handful Cilantro chopped, for garnish

Instructions 

  1. Heat oil in a large pot over medium heat.
  2. Add onions and cook until golden brown.
  3. Add garlic and ginger, sauté for 2 minutes.
  4. Stir in the Madras curry powder and cook for another minute.
  5. Add chicken and cook until browned on all sides.
  6. Pour in the canned tomatoes and coconut milk. Bring to a boil.
  7. Reduce heat and simmer for 20 minutes or until chicken is cooked through.
  8. Season with salt and pepper to taste.
  9. Garnish with chopped cilantro before serving.
