Ingredients 

Main Ingredients

  • 4 tomatoes, chopped
  • 1 onion, chopped
  • 2 green chilies, chopped
  • 1 inch ginger, chopped
  • 2 cloves garlic, chopped
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon urad dal
  • 1 teaspoon chana dal
  • ¼ teaspoon turmeric powder
  • Salt to taste
  • 2 tablespoon oil
  • A few curry leaves
  • 1 tablespoon tamarind paste
  • 1 teaspoon jaggery

Instructions 

  1. Heat oil in a pan. Add mustard seeds, cumin seeds, urad dal, chana dal, and curry leaves. Sauté until they splutter.
  2. Add chopped onions, green chilies, ginger, and garlic. Sauté until onions turn golden brown.
  3. Add chopped tomatoes, turmeric powder, and salt. Cook until tomatoes turn soft.
  4. Add tamarind paste and jaggery. Mix well and cook for another 2-3 minutes.
  5. Let the mixture cool. Blend it to a smooth paste.
  6. Serve with idlis.
