Ingredients 

Main Ingredients

  • 1 cup Red Lentils rinsed
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Ginger grated
  • 2 tablespoon Olive Oil
  • 1 teaspoon Turmeric
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 1 teaspoon Chili Powder
  • 4 cups Vegetable Broth
  • 1 can Diced Tomatoes 14.5 oz can
  • 1 teaspoon Salt to taste
  • 1 handful Cilantro chopped, for garnish

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the chopped onion, garlic, and ginger. Sauté until the onion is translucent.
  3. 3. Stir in the turmeric, cumin, coriander, and chili powder. Cook for another minute.
  4. 4. Add the rinsed lentils, vegetable broth, and diced tomatoes. Bring to a boil.
  5. 5. Reduce heat and let it simmer for about 25-30 minutes, or until the lentils are tender.
  6. 6. Season with salt to taste.
  7. 7. Garnish with chopped cilantro before serving.
